Why Does Honey Crystallise?
A fascinating aspect of honey is crystallization, a natural process where glucose sugars form solid crystals. The main sugars in honey are fructose & glucose; when honey has a higher glucose-to-fructose ratio (such as flower honey as compared to tree honey) it tends to crystallize more quickly. Processed honey, which is typically heated and filtered, will resist crystallization longer, as will honey diluted with moisture. Crystallized honey retains all its flavour and health benefits.
What Do I Do If My Honey Crystallises?
If you prefer your honey in liquid form, simply place the jar in a warm water bath (not exceeding 110°F/43°C) and stir gently until the crystals dissolve. This gentle heating restores its original texture while preserving the honey’s unique taste and nutrients.
Why Is Honey Different Colours?
The colour of honey can range from light amber to deep, rich brown, influenced by the types of flowers visited by the bees. Cotton flower honey is light with a high sugar content, crystallizing quickly, transforming to a creamy, white, buttery texture. In contrast mango blossom honey is a dark amber with a robust flavour and remains a liquid for longer. Each honey is a unique blend, offering a taste experience ranging from floral and fruity to rich and malty.
